Let’s bake! „Galette des rois“ recipe

Hello, Camäléon bakers! January isn’t over yet, so there is still time to bake a delicious „galette des rois“. This traditional French cake is meant to celebrate the Epiphany, when the three Kings visit the baby Jesus on 6th January.

There are many different types of „galettes des rois“, but I’ll show you how to bake the most famous one.

Ingredients:

2 puff pastry circles (but you can actually vary the form since we find mainly rectangular puff pastry dough in Germany. Be creative!)

1 egg yolk

For the filling:

75 g soft butter (at room temperature)

75 g sugar

2 eggs

140 g ground almonds

First, mix the butter, the sugar, the eggs and the ground almonds together.

Put one of puff pastry dough on a tray lined with baking paper, and prick it with a fork.

Then, pour the almond mixture on the dough and put a porcelaine figurine in it (in french this is called a „fève„. Traditionally, it represented the baby Jesus, but nowadays you find all kinds of figurines). If you don’t have one, it doesn’t matter!

Place the second piece of puff pastry on top of the first one, and seal them well with a fork. You can also use some water to stick the two pieces of dough together. Use a brush to distribute the egg yolk evenly on top of the galette, after you’ve made decorative grooves with a fork or a knife.

Bake at 190°C for 20 minutes. And enjoy!
